This wheat beer was fermented by a symbiosis of Saccharomyces and Brettanomyces type yeasts as well as pediococcus type lactic acid bacteria and lactobacillus for 18 months in French oak barrels. Presenting a beautiful straw color, it offers aromas of green apple on a background of oak. It is subtly woody and round, which balances the very marked acidity of this beer.
