The dominant sour taste of the Summer Solstice is obtained naturally by letting the unboiled must sour for a few days. Everything is completed by the addition during fermentation of a phenomenal quantity of whole fruits. The result is a very refreshing beer in which the tangy flavors of wild fruits are king, with raspberry in the lead.
