Made from lean, noble Quebec pork* to which ventrèche is added , the mild spicy chaton is a fattier sausage than the sticks. The addition of ventrèche to the mixture gives it delicate smoky notes that are wonderfully brought out by the cayenne pepper. There are also notes of dried black olives.

Ingredients
Organic pork, organic maple-smoked belly (organic pork, sea salt, organic brown sugar, natural maple smoke), sea salt, organic paprika, organic black pepper, organic brown sugar, organic cayenne, organic nutmeg, ferment, natural casing. May contain: hazelnuts, milk. No nitrites.

Between 28 and 33 days for 50% weight loss.

Conservation
Like fine wine, our sausages have no expiration date. Store in the refrigerator in their original packaging or wrapped in a slightly damp cloth.

Additional Information
The catkins are stuffed into what is called menu 45, a larger part of the intestine than that used for sticks. This gives them their shape, which is reminiscent of the catkins found on the branches of certain varieties of trees in Quebec.
